Soulful Sambar: A Taste of South India

Ingredients:

  • Drumstick/Brinjal: 3
  • Turdhal (Toor Dal): ½ cup
  • Tamarind: Small gooseberry size
  • Subhi Masala Sambar Powder: 2 tbsp
  • Turmeric: ¼ tsp

For seasoning:

  • Oil: 2 tbsp
  • Mustard seeds
  • Hing (Asafoetida)
  • Curry leaves

For garnishing:

  • Coriander leaves

Preparation:

1. Prepare the Vegetables:

  • Begin by preparing the vegetables. Cut the drumstick into 2–3-inch pieces, removing the outer strings. You will need around 10-12 pieces in total.

2. Cook the Dal:

  • Soak the turdhal (Toor Dal) in a cup of water for about 10 minutes. Then, pressure cook the dal, adding turmeric powder, for about 3 whistles. Once the pressure releases, mash the dal well.

3. Sauté the Vegetables:

  • In a cooking pot, heat the oil. Add onions and sauté until they become translucent. Then, add tomatoes and continue sautéing.

4. Add Vegetables and Spices:

  • Now, add the prepared drumstick pieces to the pot. Season with the required amount of salt and turmeric powder. Allow the vegetables to cook until they become tender.

5. Incorporate Turdhal and Subhi Masala's Sambar Powder:

  • Once the vegetables are cooked to perfection, add the cooked turdhal (Toor Dal) and Subhi Masala's Sambar Powder. This is where the magic happens, as the Sambar powder infuses the dish with its rich blend of spices.

6. Introduce Tamarind Juice:

  • Next, it's time to add the tamarind juice, which will bring that delightful tanginess to the Sambar. Adjust the quantity to your taste preferences.

7. Season and Garnish:

  • To finish off, prepare the seasoning by heating some oil and adding mustard seeds, hing (asafoetida), and curry leaves. Allow them to splutter and release their aroma. Add this seasoning to the Sambar for that final burst of flavor.

  • Garnish your Drumstick and Brinjal Sambar with freshly chopped coriander leaves. The vibrant green adds a lovely touch to this already colorful and aromatic dish.
